2,792 cc Ford Cologne V6 engine not possible

I was trying to make the Ford Granada 2.8 engine but the bore x stroke is not possible to create. 93.03 mm Bore, 68.5 mm Stroke

This should be possible, no?

There are a few engines I have been unable to recreate, though none come to mind straight away. In the real world this ratio is not restricted, but in the game it is. If 1000 engines are re-creatable, and only 25 are not re-creatable, it is fine by me, however. Seems pretty inclusive to me, so I just live with it. :)

EDIT: Chevy 302 V8 is barely re-creatable with 4.00" (101.6mm) bore and 3.00" (76.2mm) stroke.

Well you can do it quite easily with the new system :)
When you start adjusting bore and stroke, you will have those two values called "Min Variant Bore/Stroke", which should make it possible to create some of these engines.

For the Cologne V6: Set Bore to 93 and Stroke to either 76 or 70. Now on the second tab - the "Variant Tab" you can lower the stroke to the Min-Variant one, which is 68.5mm :)

Ohhh, see I just learned a new trick! On the main (Engine Family) tab, the limits are .75-1.33 on bore/stroke ratio. On the second Engine Variant (bottom end) tab you can increase this to 1.5! Good to know. :) Still excludes nearly all Ferrari V10s and V12s, however, as they are north of 2:1
