Is it just me that struggles to fit engines into cars, small hatch backs should be able to take a 1.6 surely?

Make sure that you are putting engines in in longitudinally, as that generally tends to free up more space. Besides from that, there could be a few bugs related to fitting engines.

or you can make undersquare engines. I can fit a 1924cc Inline 4 transversely into the 2014 punto/yaris type body with 75.4 bore x 107.7 stroke

Depends a lot on the suspension type. MacPherson allows for bigger engines than double wishbone.
