Hi, this may just be me missing something, but there appears to be a glitch regarding different body trims, as the title suggests. What happens is that whenever I add a new trim, any alterations I make to the body, lips, grilles, etc, are reset to the original trim design whenever I reload the game.

In which version is this? Fixture changes, if elusively that, don't save automatically, you need to press the save button or make any other change to the trim in order to save.
If you've done that, then it might be that you are confusing model template with actual trim. There are two buttons to the lower left of the trim fixture page that lets you copy from template to Trim and vice versa.
