I have a few questions.

1. How do I know how many gallons my car holds, and is the MPG in the game the average when you combine highway, city, etc?

2. How do I know how big of an engine can fit in my car?

3. How do I know if my steering is good or if I have under/oversteer?

4. Is high-end performance better than low-end performance, and is it bad to have lower RPM on the torque than on the HP?

1 Under detailed information you can see a tab dedicated to fuel economy. The fueleconomy is calculated a different speeds at the higher gear possible, like cruising. Depending on the rpm you're cruising the game calculates the fuel required during certain distance. Then (I guess) the value showed is the average of the cruising consumptions.
The size of the fuel tank AFAIK is not calculated.

2 That has been asked before in suggestions, and you can't really know how big the engine can be, because it depends on the configuration, the position and the drivetrain. There are some car bodies where you can fit a front in-line 6 in a RWD configuration, but not v6 in AWD, despite the v6 being smaller.

3 there are 2 steering graphs, the higher speed (under the aero tab) and a lower speed cornering under the suspension tab. You want your steering to be between the red and the blue line. If iit's above the red line it is oversteering. The Y axis is the speed, generally you want your car to not-oversteer and to go as far as you can in the Y axis. Thanks for the tips, I managed to reduce my track time by 2 seconds on my family wagon with a bit of suspension tuning, without losing much comfort of drivability.
They do really need to add Fuel capacity to the game too.

What year is it? If it is modern then it is bad. If it is in something like the 40's then IDK.

I think a better answer will be "I want to know how far my truck can go without refueling. You don't need to know the tank capacity if you truck has a good or bad fuel economy.

The answer to the "how far" question is "far enough for the purpose of the vehicle". It is not an interesting design decision to make, IMO.

Also, even if two vehicles have the same range, if you're putting twice as much fuel into one as the other, that's EXPENSIVE.
